Fontignano

The agricultural society Casaioli is situated in the heart of Umbria, at Fontignano. The origin of the city’s name comes from various water sources. The town is on the top of the hill, in the Trasimeno Lake area, a place where the nature blooms.
This is where magic takes place: we have been doing breeding, cereal and olive cultivations for twenty years by now, respecting the rural culture.
The nature rules our work.
The family business carries on its daily activities in an area full of tradition, history and culture.
The landed property was once the estate of the “Castle of Fontignano” under the domain of the famous Cathedral of Mongiovino.

The positive environment, the weather and the culture of our land helped the agricultural development since the start, and still allow us to greed and cultivate a various amount of high quality products.
The company is focused on maintaining the Umbrian traditional products with a special attention on quality, in order to secure the future of this great eno-gastronomic tradition. In the total respect of the agricultural tradition of the region, the company has been equipped with a photovoltaic system since a few years.

Our farms: the Chianina

Our breeding is specialized in selecting Chinina beef suitable for meat production, of high quality and sensorial ad nutritional characteristics.
We breed Chianina cattle, whose race has Etrurian origin, and it has been breeded for more than 22 centuries in Umbria and Tuscany.
Calfs are breeded according to the rules of I.G.P. of Consortium of Protection “Vitellone Bianco dell’Appennino Centrale”, indeed all the animals are subscribed to the genealogical tree in the studbook of A.N.A.B.I.C.
Cattle breeding is kept under favorable conditions: the cows are fed with products harvested on our land, such as corns, barley, bran and field beans, which all are GMO-free.
The meat obtained from the Chianina breed is certainly lean, low in cholesterol and of excellent quality.

Our extra virgin olive oil

We own about 350 plants spread over in 2 Ha of land which includes the following cultivar: Frantoio, Leccino, Moraiolo. The olives are harvested by October and cold pressed within 24 hours. Olive culture provides a rich and fragrant olive oil D.O.P., highly valued in the area.

Our wine

Our family, and company as well, became a wine produced, to rediscover and and enhancing old and new tastes. The names of the wines come from local springs such as “Pelagalla” and “Dellavilla,” from the street of all the vineyards “Collicelli” and “Fontinius,” the Latin name of Fontignano. We have the autochthonous Sangiovese as a red grape variety, but also the international Merlot and the characteristic Gamay, a vine able to give a real expression to the region traditions. Among the white varieties, there are Grechetto, a significant Umbrian variety, and Chardonnay, which combines pleasantness and an excellent taste-olfactory correspondence to the wine. Since 2021 we have added to production a so-called “Pet Nat, from the French words “petillant naturel”, a natural sparkling wine, not filtered, without the addition of yeast and sulphur dioxide.

Our farms: the Chianina

The cattle of our company belong to the Chianina breed, of Etruscan origin, bred for over 22 centuries in Umbria and Tuscany.
The garments are raised according to the rules of the I.G.P. of the consortium of protection “White Vitellone of the Central Apennines”, in fact all the animals are registered in the herd book held by the A.N.A.B.I.C. The cattle are also raised in favorable conditions: they are fed with products harvested in the land owned by our company (such as corn, barley, bran, field beans, etc.) free of O.G.M.
The cow-calf line has been carried out for over 40 years (closed cycle), in this way, by not purchasing cattle from external farms, we can guarantee stable immunity, lowering the risk of introducing foreign pathogens, consequently rarely resorting to the use of antibiotics.
The meat obtained from this specific breed is lean and low in cholesterol, absolutely delicious.

Chianina meat today represents a staple food for a correct and balanced diet, essential for the harmonious development and health of the human body.

Our extra virgin olive oil

The Casaioli Stefano farm has about 350 plants spread over 2 hectares of land and includes the following cultivars: Frantoio, Leccino, Moraiolo.
The olives are harvested from early October and pressed as soon as they are picked with a cold extraction system.

Our wine

The wines of the “Casaioli Stefano” Agricultural Society are born from the perfect synergy of the meeting of tradition, handed down for over three generations, and the need for a product of excellence that enhances the Umbrian territory. The denominations of the four wines produced in fact report the names of the historical sources of the town of Fontignano, a famous hamlet of the Umbrian capital due to the presence of the remains of Pietro di Cristoforo Vannucci, known as il Perugino.
All the wines produced also boast the most important wine certifications: DOC and IGT.
