Fontignano

The Casaioli Stefano Agricultural Society is located in Umbria, in Fontignano in the Municipality of Perugia. Fontignano, whose name probably derives from the countless water sources present in the area, climbs up the slopes of the Trasimeno Hills, places where nature gives its best.

The company carries out its farming, olive growing, viticulture and cereal production activities in absolute respect of the agricultural tradition of the region; the company is in fact equipped with a photovoltaic system that supplies the business needs. The breeding specializes in the selection of Chianina cattle (registered in the family tree and with the I.G.P.mark) for the production of high quality meat with remarkable organoleptic and nutritional properties. Olive growing supplies a D.O.P. rich and fragrant much appreciated in the area.

But the real pride of the company is viticulture where the grapes ripen that give life to a selected production of wines. The company’s red grape varieties range from the autochthonous Sangiovese, to the international Merlot, to the characteristic Gamay, a grape capable of giving a wine that is an expression of this territory. The white varieties mention Grechetto, a symbolic Umbrian grape, and Chardonnay which gives wines of excellent structure, with a great olfactory taste and a pleasantly fruity bouquet.

The company aims to maintain and strengthen traditional Umbrian products, with a keen eye on a quality food and wine vocation. The daily life of this family-run company takes place between woods, lakes and waterways, in an area rich in traditions, history and culture. The landed property boasts belonging to the old countryside of the Castle of Fontignano, which belonged to the possessions of the Cathedral of Mongiovino.

There are traces of the Castle and its countryside dating back to the 11th century, and other evidence can be found by browsing through the ancient statute of the small village. In this land rich in many beauties, the Casaioli Stefano Agricultural Company works on the rediscovery and enhancement of old and new flavors, taking inspiration from its sources: Pelagalla, Dellavilla, Nova and Luna, to give life, great expressive strength and a a pinch of magic to their wines.

The favorable environment, climate and peasant tradition of our land have always allowed a significant development of the agricultural sector, which still allows us to breed or cultivate a wide range of products.

Our farms: the Chianina

The cattle of our company belong to the Chianina breed, of Etruscan origin, bred for over 22 centuries in Umbria and Tuscany.
The garments are raised according to the rules of the I.G.P. of the consortium of protection “White Vitellone of the Central Apennines”, in fact all the animals are registered in the herd book held by the A.N.A.B.I.C. The cattle are also raised in favorable conditions: they are fed with products harvested in the land owned by our company (such as corn, barley, bran, field beans, etc.) free of O.G.M.
The cow-calf line has been carried out for over 40 years (closed cycle), in this way, by not purchasing cattle from external farms, we can guarantee stable immunity, lowering the risk of introducing foreign pathogens, consequently rarely resorting to the use of antibiotics.
The meat obtained from this specific breed is lean and low in cholesterol, absolutely delicious.

Chianina meat today represents a staple food for a correct and balanced diet, essential for the harmonious development and health of the human body.

Our extra virgin olive oil

The Casaioli Stefano farm has about 350 plants spread over 2 hectares of land and includes the following cultivars: Frantoio, Leccino, Moraiolo.
The olives are harvested from early October and pressed as soon as they are picked with a cold extraction system.

Our wine

The wines of the “Casaioli Stefano” Agricultural Society are born from the perfect synergy of the meeting of tradition, handed down for over three generations, and the need for a product of excellence that enhances the Umbrian territory. The denominations of the four wines produced in fact report the names of the historical sources of the town of Fontignano, a famous hamlet of the Umbrian capital due to the presence of the remains of Pietro di Cristoforo Vannucci, known as il Perugino.
All the wines produced also boast the most important wine certifications: DOC and IGT.
